WThis is a simplified take on a cocktail from our latest menu. It's a party-sized pre-mixed that is bursting with the essence of a Christmas time, making it perfect for your celebration. Save the extra cordial to use in breakfast cocktails, puddings, or for another batch of the drink.
The Bikini Cocktail
Serves 10 guests
Ingredients for the Citrus Syrup (produces 750ml)
300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g caster sugar
Ingredients for the Cocktail (makes 850ml, to serve 10)
400ml decent vodka
100ml dry gin
150ml peach liqueur
200ml clementine syrup (as made above)
Whole cranberries, to garnish
Mandarin essential oil, for finishing
Directions
Making the Citrus Syrup: Put all the ingredients inside a saucepan, heat until it reaches a gentle boil, agitating to dissolve. After that, remove from the burner allowing it to cool down fully. Transfer to a sealable bottle, close it and store chilled, it will last for about a month.
For the Batch Mix: Combine the specified spirits and syrup in a big jug, allow it to infuse for one hour, then pass it through , ideally through cheesecloth, to ensure it's completely strained.
To serve: Pour 85ml of your premix to a mixing glass filled with ice, and stir lightly for a minute to chill. Pour to a chilled martini glass or equivalent, garnish with the cranberries and complete it with a brief mist with the mandarin essence over the drink.
